Videos I've seen of conversions often use some sort of expanding strut, pressing across the van to hold wood in place whilst the glue is setting. Anyone know what these are called/where I can get them?

Why not cut some lengths of thin springy timber just slightly too long to hold the pieces in place whilst the glue goes off. The timber trying to become straight should exert just the right pressure.
Great idea, worked a treat.
For anyone else coming across this, I also got a couple of spring loaded adjustable shower rails from a local store, which were quite handy when the force had to come from a precise angle, but for most of it I used some 22*47mm baton lengths which I cut in half lengthways, and then cut lengths a bit longer than the height of the roof. Putting them up against the bit that needed supporting and then kicking the bottom in along the floor till it was snug worked nicely.
These were also brilliant for propping up the roof in order to size and fit it, and will now be chopped up to make batons for the cupboards and supports to create space for insulation behind the door panels.
