Definitely! I've lived in a van with my girlfriend for 3 months in Europe (spring / summer) and for 4 months in NZ (autumn). Things which make it easier are time of year i.e. the summer means you will hopefully be able to spend quite a bit of time outside, and where you go i.e. ease of parking up / campsites. The south island of NZ was great for just being able to park up wherever for free. Depends how plush your conversion is but a few regular stops at public toilets, cafes and the odd swimming pool or river for a wash works well!! Probably depends how much of a comfort lover you are but for one person a campervan should be more than enough.
